FORUM GASTRONÓMICO 2022

The Fórum Gastronómico took place on September 25, 26, and 27 in A Coruña, the largest professional gastronomic event in northern Spain. Since its first edition in Galicia in 2008, it has become an essential meeting point for food service professionals in the northwest of the Iberian Peninsula.

Galicia, renowned for its seafood, warmly embraced the solutions Caprichos del Paladar offers to restaurants, such as our confit artichoke flower—a trending vegetable served confited in EVOO and frozen, ensuring fresh artichokes year-round. Other offerings, including EVOO confit leeks, roasted sweet potatoes, and natural pear tomatoes, were also highly appreciated. The synergy between traditional Galician cuisine and the latest green trends was undeniable, creating a perfect culinary harmony.

The event was an overwhelming success, and we are deeply grateful for the enthusiastic response we received. We had the pleasure of cooking with confit artichoke flowers, leeks, and bases, along with roasted sweet potatoes and peppers, showcasing their versatility and quality.

Fair Highlights

Taking advantage of the occasion, we developed “Land and Sea” recipes, demonstrating the seamless union of these two worlds and their potential to create innovative and exciting dishes.
